 Ingredients


  • 200 g of oatmeal
  • 4 eggs
  • 1 pinch of salt
  • 45 g of plain yogurt (make it thick)
  • 1 teaspoon olive oil
  • A teaspoon of vanilla essence
  • cinnamon powder

Preparation


  • First, we preheat the oven to 180 ÂșC and, meanwhile, we can prepare our cookies.
  • In a bowl, mix the eggs with the vanilla and beat with a hand mixer. Then, little by little, we add the yogurt while we continue mixing. At this point, it is important to know that we must drain the yogurt well.
  • Subsequently, we also add the oil and salt, and continue beating the mixture.
  • Then we add the oatmeal and cinnamon and continue mixing. We should have a slightly liquid mass but that it is possible to shape it.
  • Then, we grease a baking sheet and we take our dough to form the cookies. As it is a little liquid, we will have to use a spoon and then shape them by hand or with the spoon.
  • Finally, we introduce the tray in the oven and bake for 15 or 20 minutes until we notice that they have browned.

Second recipe: oatmeal and yogurt cookies with honey


Ingredients


  • 1 cup of plain yogurt
  • A cup of oat flakes
  • 1 cup oatmeal
  • 3 tablespoons butter or vegetable margarine
  • 2 eggs
  • 1 teaspoon baking powder
  • 5 tablespoons honey

Preparation



  • First, we can put the oven to preheat at 200 ° C. Meanwhile, we prepare our cookies.
  • To do this, in a bowl add the butter at room temperature and honey, and beat everything very well until a homogeneous mixture.
  • Next, we add the oatmeal, flour and baking powder and continue mixing. If you wish, you can add cinnamon to give more aroma to your cookies.
  • Then, we add the cup of yogurt and eggs. Mix well until we have a homogeneous and uniform dough.
  • Then, we greased a baking sheet with butter and we take the mixture from the bowl forming the cookies. We place them in the tray separated from each other or, otherwise, they may stick together when they grow.
  • Finally, when we have shaped all the cookies, we introduce the tray in the oven and bake about 20 minutes at 200 ° C.

Some extras


  • You can also add chia seeds or any other seed to both recipes. In addition, especially in the second recipe, you can also include chopped nuts or even raisins, for example.
  • Keep in mind that these cookies will barely rise in the oven. Therefore, the finer the shape you give them, the more crunchy they will be.
  • Although we propose yogurts without flavor, you can also opt for a yogurt of flavors that combine with oatmeal so that your cookies are even more tasty and to your liking.
